These are Slow Spirits. In the ethos of the food movement by the same name, we honor only producers who are mindful at eight clear stages of production: from the sourcing and preparation of the base ingredient, to fermentation, to the act of distillation, to barrel aging without the addition of any sugars or colorants, to the decision to bottle at just the right alcohol by volume without augmenting with extracts or flavorings.  You also could call these Single Origin Spirits as we understand them to be agricultural products. The rest of the alcohol industry may be dominated by marketing and a scarcity of good information, but at Bar Agricole we know that spirits produced transparently, adhering to the above values are the best available, both in terms of their integrity and how they taste.
