I felt sheepish asking Lance Winters at St. George to make this gin when he already produces three beautiful ones, including the dry rye gin which we may have served more than any other at Bar Agricole. Gin is basically a tea made with alcohol instead of water. Naturally, producers are attentive to the flavoring components, the botanicals, but often I’ve found the neutral alcohol used in gin to have a subtle but decidedly industrial finish. I have been curious to try a more remarkable base spirit with some lovely Bay Area aromatics. The biodynamically produced grape spirit in this bottle is decidedly that. Think bursts of California citrus and herbs with a traditional spine of cracked juniper and dry spices.
