Bar Agricole Seasonal Citrus Gins - Hashiri, Shun, Nagori
In Japan, seasonality has guided cuisine and aesthetics for over a thousand years. By the Heian period (794–1185), poets and chefs celebrated ingredients at their shun, the fleeting moment of perfect ripeness. From this aesthetic evolved Kaiseki cuisine in which each dish is a meditation on seasonality. This limited release of gins by Bar Agricole honors this idea, harvesting California citrus at three distinct points in the 2024–25 growing season and beginning maceration for each within 24 hours in biodynamic grower-producer grape spirit.
Hashiri Gin - Early Season
Picked December 1, Hashiri is a blend of Meyer lemon, green Washington navel, and Buddha’s Hand citron that captures the pithy, floral notes of the early season.
Shun Gin - Peak Season
Picked January 15, the Meyer lemons, Washington navels, tangerines and mandarins in the Shun gin generate a lush, and complex profile that connotes the peak of the season.
Nagori Gin - Late Season
Made from ruby grapefruit, Persian lime, blood orange, and late Washington navels, all picked on February 21. Nagori captures bittersweet oils, concentrated sugars, and the saturated quality of winter’s last citrus. We say goodbye to another year.
